Morning sweet cheeks!
Well yesterday evening I decided upon being very uninterested in the cake mixes in my pantry that I would make some muffins. After a quick trip to the shops some white chocolate and raspberry muffins were in the making!
What you'll need
- 1 3/4 cups of self raising flour
- 2/3 cup caster sugar
- 250g white chocolate chips [recipe originally states 100g white chocolate]
- 1 egg
- 1/2 cup vanilla/natural yogurt [recipe originally states 1/2 cup sour cream]
- 1/3 cup milk
- 2 cups of fresh or frozen raspberries [recipe originally states 1 cup fresh or frozen raspberries]
- 10 patty papers
Firstly preheat your oven to 200C fanforced.
Secondly, stir together the flour, sugar and white chocolate.
Thirdly, whisk together the egg, yogurt, milk and melted butter. Add this to the flour mixture and stir until just combined - don't over mix! Next add half of the raspberries whilst mixing in the mixmaster. Once this has combined well, remove the bowl from the mixmaster and maually stir/fold in the remainder of the berries.
Spoon out the mixture evenly into the patty papers. As a finishing touch
I placed an additional raspberry in the middle of each muffin.
Bake for approx 25 minutes or until golden on top and slightly firm in the middle!
