Lazy Sunday Perfect Pancakes

So it's a typical lazy Sunday morning and there's nothing I'm craving more than some hot fluffy pancakes! So I figured...why not share it with you guys! Here is my best, most favourite pancake recipe I hope will cheer up any gloomy day.



What you'll need:
  • 2 cups of self raising flour
  • 2 eggs
  • 2 tea spoons of brown sugar
  • 2 pinches of salt
  • 1 1/2 - 2 cups of milk

My general rule for the ingredients is "2". So there's 2 of everything, except the milk which you can add at your own guidance depending on how thick you want your pancakes to be.
I personally use 1 1/2 cups of milk and my pancakes turn out thick and fluffy every time!

     

     

     

Mix all the ingredients together starting with your dry mixtures - flour, salt and sugar.
Then add in half the milk and one egg and mix well.
Add in the remainder of the milk and the second egg and mix thoroughly once more.

Poor palm sized (as in the size of your palm) dollops into a medium temperature pan, greased with butter. Wait until tiny bubbles have begun to form on the surface of the whole pancake and then flip!



Best served with maple syrup, some yummy bacon and our all natural berry sorbet.
